Here are our 21 most popular vegetarian salads that are satisfying and hearty, full of fresh and vibrant produce, vegetable protein, and, of course, delicious flavors! The best part? Everything can be prepared in advance, perfect for midweek lunches during the week, or ideal for potlucks and gatherings.

I love knowing that there is something healthy on hand that I can just get out of the fridge when I run out of time. Having a healthy salad at my fingertips personally helps me stay on track with my health goals, turning away from snacks that are too easy. For convenience, I try to prepare some healthy meals in advance (like soup and salad) for the week – and I find I make healthier food choices this way. Try it and see!
